This delicious ice cream pie is great for your summer bbq, potluck, or summertime treat!

Ingredients

  • Crust:
  • 5 waffle cones, crushed
  • 3 graham crackers, crushed
  • 2 tablespoon brown sugar
  • 5 tablespoon melted butter
  • Filling:
  • 2-3 cups vanilla ice cream, softened and divided
  • ½ cup caramel sauce
  • 1 cup peanuts
  • Chocolate Ganache:
  • 1 cup semisweet chocolate chips
  • 1 cup heavy cream
  • 1 tablespoon butter
  • Topping:
  • extra peanuts, chopped
  • crushed waffle cone

Instructions

  1. In a bowl, mix crushed waffle cones, crushed graham crackers, brown sugar, and melted butter until evenly combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
  3. Freeze the crust for 10–15 minutes to set.
  4. Spread half of the softened vanilla ice cream over the chilled crust in an even layer.
  5. Drizzle caramel sauce over the ice cream and sprinkle with peanuts.
  6. Spread the remaining vanilla ice cream over the top, smoothing the surface.
  7. Freeze the pie for at least 15 minutes, or until firm.
  8. In a microwave-safe bowl or saucepan, heat heavy cream until just simmering, then pour over chocolate chips and butter.
  9. Let sit for 1 minute, then stir until smooth and glossy to make ganache.
  10. When cool, pour ganache over the frozen pie and spread evenly.
  11. Top with extra chopped peanuts and create a pie crust with crushed waffle cone.
  12. Chill the pie for another 30 minutes or more, or until the ganache is set.
  13. Slice into 9 bars and serve frozen.
