I was playing around in the kitchen with a few ideas that I had, and I created this recipe for Peanut Butter Cup S'mores Cupcakes.

These sweet treats were a mix of my Reese's Peanut Butter Cup Chocolate Cupcakes and S'mores Cupcakes. My oldest son, who is a peanut butter lover, told me that these were the "best pastry I've ever had." What a huge honor!

What makes these cupcakes super decadent is the hidden mini Reese's peanut butter cup in the middle. It's super simple to make these. Just insert a mini cup halfway through baking! It's a sweet surprise that anyone who loves Reese's cups will love to find in their cupcake bite.

Other components of this recipe that make them utterly delicious: Miss Jones chocolate frosting (although any chocolate frosting will do, but the flavor of this one is so good, rich, and creamy, and doesn't taste fake.) Also, toasted marshmallow creme topping and a drizzle of melted peanut butter cups.

How can I make this recipe gluten free?
People are often intimidated by the words "gluten free," but making recipes without gluten is actually pretty simple. Just read labels and find gluten free cake mixes, frostings, graham crackers, and also...Reese's mini cups are already gluten free! (not all Reese's products are gluten free, so again, read the labels.) Making it dairy free is a bit more difficult, but they do make dairy free peanut butter cups that are likely easy to find at your grocery store.

Peanut Butter Cup S'mores Cupcakes
These peanut butter cup s'mores cupcakes are rich and ooey gooey delicious!
Ingredients
- one box of chocolate cake mix, plus ingredients to make it (usually eggs, oil, water)
- chocolate frosting
- Reese's peanut butter cups, mini
- graham crackers, crushed
- marshmallow creme
Instructions
- Prepare cake mix according to package directions.
- Line cupcake pan with paper liners.
- Pour batter into each paper, filling about ⅔ full.
- Bake according to package directions, taking out after 10 minutes.
- Place one mini Reese's peanut butter cup in each cupcake, pressing down slightly.
- Finish cooking cupcakes until done.
- Remove from oven and let cool completely.
- Meanwhile, make the marshmallow topping by placing parchment paper in a cookie pan.
- Spoon out about a tablespoon of marshmallow creme in dollops on the pan.
- Gently flatten out dollops, (they don't have to be perfect at all), and broil until slightly browned.
- Let cool.
- Frost each cupcake with chocolate frosting.
- Sprinkle about a half of a teaspoon of graham cracker crumbs on top of the chocolate frosted cupcakes.
- Then, using a thin metal spatula or knife, carefully remove the browned marshmallow creme and gently place on top of the frosted cupcakes.
- Next, melt 6 mini peanut butter cups in the microwave for about 20 seconds. Stir. If not smooth and melted, microwave for about 10-20 seconds more and stir.
- Gently drizzle melted peanut butter cup over the marshamllow topping. (you can also pipe it out of a plastic sandwich bag for uniformity.)
- Enjoy!
