The Ultimate S'mores Cupcakes with Marshmallow Creme Inside

S'mores desserts seem to be well loved by everyone, so I made these S'mores Cupcakes for potluck today, and they were a hit!

There are a few steps and ingredients, but all in all, these cupcakes are not difficult to make. Start with a store-bought cake mix and the ingredients it takes to make it (usually eggs, oil, and water.) Then add marshmallow creme inside, top with frosting, crushed graham crackers, and toasted marshmallow bits.

You can, of course, make everything homemade if you prefer. The steps are still the same. Here is a delicious whipped ganache recipe you can use.

You can also make this recipe gluten free and dairy free by using cake mix, frosting, and other ingredients that are dairy and gluten free. Any of your favorite cake mixes and frostings will work well, but the frosting I chose for these is Miss Jones chocolate frosting, which is creamy, delicious, and has a hint of salt that works very well. I like it because it doesn't have that "fake" taste that some store-bought frostings can have.

These s'mores cupcakes are everything you love about the classic campfire treat, reimagined as a decadent dessert. Each cupcake is layered with rich chocolate, a hint of graham cracker crunch, and a gooey marshmallow creme center that melts in your mouth. These s'mores cupcakes are the perfect summer dessert. A chocolate cupcake with a marshmallow creme surprise inside, topped with chocolate frosting, toasted marshmallow bits, and graham cracker crumbs, they will disappear quickly!

Ingredients

  • one box of chocolate cake mix and ingredients to make it according to box
  • jarred marshmallow creme
  • one container of chocolate frosting
  • 2 sheets of graham cracker, crushed
  • marshmallow bits

Instructions

  1. Prepare chocolate cake mix according to package directions.
  2. Line cupcake tins with cupcake wrappers and fill ⅔ full with cake mix.
  3. Cook according to package directions.
  4. Let cool completely.
  5. Cut a small hole out of each cupcake and save the piece that you cut out.
  6. Fill each hole with a dollop of marshmallow creme.
  7. Top the cupcakes with the piece you cut out..
  8. Next, add a dollop of chocolate frosting to each cupcake and spread.
  9. Then add crushed graham crackers on top of the frosting.
  10. Spread ¼ of a cup of marshmallow bits on a small pan, using parchment paper to prevent sticking, if preferred.
  11. Carefully watch the marshmallows while broiling them until they are a nice brown, but not burnt.
  12. Remove marshmallows from oven and let cool.
  13. Using a metal spatula or knife, loosen the marshmallow bits and place a few on top of each cupcake.
