How To Cook For Guests On Different Diets – Prep and Pared Meal Kits was brought to you by Kroger.  All opinions are mine.

Our extended family is about average, but the various number of diets, food allergies, and food preferences are really varied.  We have those with certain allergies, those that are vegetarian, gluten-free, and those that are real “meat and potatoes” type of people. Sometimes it is hard to plan meals around those specifications, and it seems daunting at times. The solution is just to go out to a restaurant, but we all know how challenging it can be for 20 people to decide on one restaurant!

I was so excited to learn about the Prep + Pared meal kits from Kroger.  What a world of possibility this opens up for us! I enlisted the help of my 9 year old to choose a few meals and it took us a few minutes, honestly, because they just have SO many delicious options. We were intrigued by Salmon with Dill Butter + Potato Smashcakes, Truffled Steak + Sweet Potato Fries with Caramelized Onions, and more.

I settled on the Black Bean Street Cakes with Sautéed Squash and Verde Rice because….I love Mexican food and this meal was just calling my  name.  I am not allergic to gluten, but I do try to limit the gluten in my diet, and this meal just happened to be gluten free and vegan.

I was really amazed by these meal kits because, for one, you can go to the store and pick it out right there.  There is no waiting for a meal kit subscription box.  All meals are between $14 and $20 and all the information is right there on the box.  It tells you spice level, how much chopping you will need to do, and of course, the diet specifications.

Prep+Pared meal kits:

  • feed 2 adults
  • cook in 20 minutes
  • include fresh ingredients
  • recipe card with pictures come in box
  • contain all ingredients needed except oil, salt, and pepper
  • measured and prepped ingredients
  • recyclable packaging

So, if you know you will be having company, all it takes is asking what their dietary preferences might be, heading to Kroger and selecting exactly what you need.  It really could not be any easier!

Black Bean Street Cakes

When I opened the Prep+Pared meal kit box, I was a little intimidated, I will admit.  However, when I laid out all of the packaged ingredients and took a look at the recipe card, I quickly found my confidence and it really was easy!  I just followed the directions and we were eating in no time.

The street cakes were made of grits, smashed black beans, and red bell peppers.  I enjoyed the fact that I didn’t have to chop peppers, for sure!  They easily cooked up in the pan with a little oil.

The next step was sautéing the yellow squash, which of course, I did not have to chop!

The rice was super easy to make, too.  Just combine the salsa verde and rice, microwave, and plate.  I served up two black bean street cakes on top, and topped with the sautéed squash.  The meal was complete!

I really loved this meal and think it would be great to serve to someone who was following a vegan or vegetarian lifestyle…or not!  Even my meat loving husband loved this meal.  My favorite part was the salsa verde rice.  It was delicious!

There are so many possibilities with Kroger’s Prep+Pared meal kits!  What will you choose?

This is the first time I have ever heard of these meal kits and I was just at Kroger's yesterday. I really need to check these out for my family, a few of them have allergies and I'm always having to cook different meals. I wonder how those street cakes taste and if I could get the kids to try them
