Dense Bean Salad with Chicken and Peach Vinaigrette
This dense bean salad with chicken and peach vinaigrette is high in protein and loaded with flavor.
Ingredients
- 4 tablespoon Fresh Press Farms Peach Cider Vinegar
- 3 tablespoon Fresh Press Farms olive oil
- 1-2 cloves of garlic, minced
- ½ teaspoon pepper
- 1 teaspoon sea salt
- 1-2 teaspoon honey
- 2 cups chicken, cut and cubed
- ½ bell pepper, diced
- 2 tablespoon green onions, chopped
- 2 tablespoon cilantro, chopped
- 1 can of kidney beans, rinsed and drained
- 1 can of cannellini beans, rinsed and drained
- 1 can of black beans, rinsed and drained
Instructions
- Whisk these ingredients until smooth: peach cider vinegar, olive oil, garlic, pepper, salt, honey.
- Add in chicken, bell pepper, green onions, cilantro, and beans and fold gently to distribute the vinaigrette over the other ingredients.
- Serve and enjoy!
Notes
Store leftovers in fridge for 2-3 days.
Toss in an avocado right before serving if desired
Can add in hard boiled eggs, greek yogurt, or cottage cheese to make it more protein rich.
