This dense bean salad with chicken and peach vinaigrette is high in protein and loaded with flavor.

Ingredients

  • 4 tablespoon Fresh Press Farms Peach Cider Vinegar
  • 3 tablespoon Fresh Press Farms olive oil
  • 1-2 cloves of garlic, minced
  • ½ teaspoon pepper
  • 1 teaspoon sea salt
  • 1-2 teaspoon honey
  • 2 cups chicken, cut and cubed
  • ½ bell pepper, diced
  • 2 tablespoon green onions, chopped
  • 2 tablespoon cilantro, chopped
  • 1 can of kidney beans, rinsed and drained
  • 1 can of cannellini beans, rinsed and drained
  • 1 can of black beans, rinsed and drained

Instructions

  1. Whisk these ingredients until smooth: peach cider vinegar, olive oil, garlic, pepper, salt, honey.
  2. Add in chicken, bell pepper, green onions, cilantro, and beans and fold gently to distribute the vinaigrette over the other ingredients.
  3. Serve and enjoy!

Notes

Store leftovers in fridge for 2-3 days.

Toss in an avocado right before serving if desired

Can add in hard boiled eggs, greek yogurt, or cottage cheese to make it more protein rich.
