Raspberry Cheesecake Cookies (Subway Copycat)
These Copycat Subway Raspberry Cheesecake Cookies taste just like the bakery favorite if not better. Each cookie is packed with tangy freeze dried raspberries, rich cream cheese, and sweet white chocolate chips, all wrapped in a tender vanilla cake mix base. They bake up perfectly pillowy with a subtle cheesecake flavor and bursts of raspberry in every bite. Whether you’re recreating your favorite café treat or baking for a crowd, these cookies are guaranteed to disappear fast.
Ingredients
- 1 15 oz box of vanilla cake mix
- ½ teaspoon of vanilla extract
- 1 egg
- ½ cup of unsalted butter, softened
- 1 8 oz block of cream cheese, softened
- ½ cup of white chocolate chips
- 1 ½ cups of freeze dried raspberries
Instructions
1. Preheat the oven to 350° and line a large baking sheet with parchment paper.
2. Add the cake mix, vanilla, egg, butter and cream cheese to a large bowl.
3. Use a mixer to combine everything, about 2-3 minutes.
4. Add the white chocolate and the raspberries and fold and stir using your hands, you will break some raspberries while doing this but try to not break many. Fold until everything is combined.
5. Scoop about 1 ½ inch balls and place on the baking sheet. Leave about 2 inches apart from each cookie. 
6. Using the palm of your hand or the bottom of a flat glass slightly press down on each top of the cookie dough.
7.. Place in the preheated oven for 10-12 minutes.
8. Remove from the oven and let sit for another 10 minutes.
9. Serve and enjoy!
Notes
- Store in an airtight container on the counter for 2-3 days
- You may have to use your hands to mix the dough in the beginning.
- You can push extra white chocolate chips and raspberries into the tops of the cookies before baking for them to look prettier.
