I love that these can be eaten at breakfast, lunch, or dinner and make a great handheld snack, too!  Pair them with some homemade queso, salsa, or salsa cream if you like it saucy!

Enjoy these delicious Air Fryer Cheesy Mexican Corn Cakes as a side or a main course!

Ingredients

  • 1 1\2 cup corn
  • 1 medium onion, diced
  • 1 jalapeño pepper, diced
  • 1-2 limes
  • 2 eggs
  • ¼ cup milk
  • 1 cup flour
  • 1/2 cup grated cheddar cheese
  • 1/2 tsp salt
  • cooking oil spray

Instructions

    Sauté chopped onion and pepper in oil for about 4 minutes.

    Add the corn and saute for another 2 minutes.

    Remove from heat and let cool.

    Mix eggs, milk, and salt together well.

    Fold in the cheese.

    Add flour and mix.

    Add in corn, onion, and pepper mixture and mix well.

    Measure out about a spoonful of mixture and flatten it out to form a small "cake."

    Gently lay corn cakes in air fryer in a layer, careful not to overlap.

    Spray with oil and cook for 5 minutes on 370 degrees.

    Check and cook another 2-3 minutes, checking for doneness every minute or so.

    When crisp and cooked, remove from air fryer and let cool.

    Repeat for the rest of the mixture.

    Eat and enjoy!
