I have often talked about how my life changed when I made Mexican Rice in the Instant Pot for the very first time! It was SO easy and convenient and I loved that the cleanup was such a breeze. I make this recipe often in our house. Since then, I have expanded my Instant Pot Mexican food recipes that I make. I have added those and also a few delicious others to this collection for you to have on hand when you need a simple and delicious Mexican food meal!
