Simple 15 Minute Instant Pot Green Enchilada Rice

No Taco Tuesday is complete without the perfect side dish. Luckily, you have come to the right place! If you don’t like this recipe for Instant Pot Green Enchilada Rice, you can also try my Instant Pot Mexican Rice or Instant Pot Cilantro Lime Rice! But now, for the purpose of this post… green rice!

This Instant Pot Green Enchilada Rice is SO flavorful, and the secret ingredient makes is SUPER easy to make. Don’t worry about buying peppers, spices, etc, because I have the ingredient that makes it easy and perfect. I have suggested my favorite enchilada sauce here, but feel free to substitute it with YOUR favorite or your favorite homemade enchilada sauce!

A few weeks ago, Siete Foods sent me a box of delicious products and I unboxed them on my Instagram stories.

I did receive this green enchilada sauce and a few other Siete products for free, but I am not being paid to write this post. It truly is one of my favorite products!

My favorite find in this box was the Green Enchilada Sauce. This stuff is perfection in a jar! Despite the fact that it is Whole30 approved, (of course this recipe isn’t Whole30 approved, but that’s ok!) it has delicious, natural ingredients: tomatillos, green bell peppers, onions, water, jalapeños, apple cider vinegar, garlic, avocado oil, dates, sea salt chia seed, flax seed, black pepper, and turmeric. Trust me that this is the perfect flavor combo!

When I first opened the jar, I tried the sauce with chips. SO GOOD!!  You can just stop at this point if you’d like, because this green enchilada sauce makes a great dip! But it also makes enchiladas (of course,) tacos, nachos, or in this instant pot green enchilada rice!

I admittedly have never really been a fan of canned enchilada sauce, but this stuff comes in a jar, so clearly it’s the best.

It cooks SO nicely in the Instant Pot, you will love it as a side dish or even as a main meal! Rice has protein, you know, so have at it!

Simple 15 Minute Green Enchilada Rice (Arroz Verde)

Simple 15 Minute Green Enchilada Rice (Arroz Verde)

Prep Time: 5 minutes
Cook Time: 8 minutes
Additional Time: 2 minutes
Total Time: 15 minutes

Simple 15 minute instant pot green enchilada rice is so easy and a delicious side dish for taco tuesday!

Ingredients

  • 2 TBSP oil
  • 2 cups white rice, uncooked
  • 1 1/2 cups Siete green enchilada sauce
  • 1 cup chicken broth (more, if needed, make sure rice is covered with liquid before cooking)
  • 1 tsp salt, more if desired

Instructions

  1. Set the Instant Pot on saute and add your oil and rice. Leave the lid off and stir frequently.
  2. Saute the rice for about 3 minutes, until it turns a golden color.
  3. Add in the green enchilada sauce, salt, and chicken stock and stir. Scrape the bottom so the rice doesn’t burn.
  4. Close and lock the lid. Turn the Instant Pot to Manual for 8 minutes.
  5. When 8 minutes is up and Instant Pot beeps, open the vent and place a towel over it. Be careful, it is very hot.
  6. Serve with your favorite Mexican food, like my Authentic Cheese Enchiladas!

Hi! I use this recipe to make rice with the juices left in my instant pot after making carnitas. I just use 2.5 cups to 3 cups of the juices leftover (always almost the perfect amount after making 2-3 lbs) instead of the enchilada sauce + broth. This recipe base has been a game changer in terms of helping me use my cooking liquids and have less waste.:)
