Pumpkin Spice Latte Poke Cake

Pumpkin spice is not for everyone, but for those that love it, the love is intense. It is pumpkin spice everything season, so of course I made a Pumpkin Spice Latte Poke Cake!

Pumpkin Spice Latte, or PSL, is the flavor of the season. This poke cake isn't just pumpkin spice. It has coffee in it, which really gives you the Pumpkin Spice Latte flavor!

The optimal flavor and gooeyness for poke cakes is achieved about a day after baking. They just get better each subsequent day in the refrigerator, actually. They are delicious on the day of baking, but I would plan to let the poke cake fully chill in the refrigerator for 24 hours before serving.

As always, you can make this recipe gluten free by making it with a gluten free mix like this one or this one. Both of these say "bread," but they definitely work.

Note, if you're reading this in say, February, you might have trouble finding pumpkin spice cake mix, since this flavor is usually seasonal. I don't like it, but it is what it is. Consider making your own homemade pumpkin spice cake.

Since all box cake and bread mixes vary, you will need to prepare yours according to the directions on the package. The ingredients that come after the cake is cooked are always the same, but of course you can swap dairy free, decaf coffee, etc.

I sprinkled the whipped topping on top of the pumpkin spice latte poke cake with cinnamon and a little instant coffee I had. It definitely gives it more coffee flavor. Of course, both of these ingredients can be omitted and the cake will still taste amazing.

Pumpkin Spice Latte Poke Cake

This delicious poke cake is full of fall flavor! It is the full pumpkin spice latte flavor with pumpkin spice, coffee, and whipped topping.

Ingredients

  • one box of pumpkin spice cake or bread mix (plus ingredients according to package directions)
  • one can of sweetened condensed milk
  • one cup of brewed coffee
  • whipped topping
  • cinnamon, for sprinkling on top of whipped topping, optional
  • instant coffee, for sprinkling on top of whipped topping, optional

Instructions

  1. Check the box of pumpkin spice cake or bread mix for instructions. Preheat your oven and gather your supplies, according to the package instructions.
  2. Prepare cake and bake it in a cake pan.
  3. Right out of the oven, using the handle of a utensil, poke holes all over your cake.
  4. Pour your 1 cup of brewed coffee all over the cake, letting it soak in.
  5. Next, pour the 1 can of sweetened condensed milk all over the hot cake.
  6. Let sit for about 30 minutes,
  7. You can check the cake and if everything has been absorbed and the cake seems dryish, you can add more coffee and let that soak in, but that's optional.
  8. Spread the whipped topping all over the cake and refrigerate.

Notes

Store in refrigerator up to a week.
