Vegetarian Burrito Bowl - Flavorful Meal, Ready in Less Than 30 Minutes
Quick and easy, yet delicious meals are my favorites! I love when I can put together a meal in under a half of an hour, and this vegetarian burrito bowl is a go to quick meal that packs tons of delicious flavor!

The beauty of burrito bowls is you can add just about anything you like and each person can customize their own bowl to their liking. Kids don't like bell peppers? No problem...more for Mom and Dad! If kids want to add cheese or more rice, then they are able to do so! This meal is so easy and a family favorite.

Two essential ingredients of the vegetable burrito bowl are salsa and tortilla strips or chips. The bowl is good on its own, but the additional of these two ingredients will make this meal a guaranteed win for everyone.

I started my bowl with a bed of my favorite homemade Mexican rice, but you can add your favorite rice, I won't judge. You can also use Mexican cauliflower rice.
Then, add in your favorite toppings, like chopped lettuce and tomatoes, sautéed yellow bell peppers, black beans, guacamole, and top it all off with salsa and tortilla strips. YUM.

Vegetarian Burrito Bowl
Make it a vegetarian burrito bowl night with this customizable meal!
Ingredients
- salsa
- tortilla strips or chips
- Mexican rice (or your favorite rice), ¾ cup per person
- yellow bell pepper
- one can black beans, rinsed and drained
- cherry tomatoes, washed and halved
- lettuce, washed and chopped
- guacamole
- lime juice
Instructions
- Start off by making a batch of Mexican Rice, if you don't already have some.
- While rice is cooking, wash and chop your tomatoes, bell peppers, and lettuce.
- Rinse and drain pinto beans.
- Saute bell pepper strips in a little oil in a pan for about 5 minutes, until cooked.
- Add about ¾ cup of rice to a bowl.
- Add in your pinto beans, lettuce, halved cherry tomatoes, bell peppers, and anything else your heart desires.
- Add a dollop of guacamole.
- Lastly, add tortilla strips or chips and salsa, as much as your heart desires, and dig in!!
